we got our first snow yesterday. Luke was away for a teacher thing, so I snuggled up on the sofa with a big mug of cocoa and "Love Actually". one of my favorite Christmas movies. despite, or maybe because, I bawl my eyes out every time. every time.
then my Christmas cheer decided to manifest itself in the form of... cookies!
I threw on some Christmas tunes and my favorite apron and got busy. I love baking. love love LOVE baking. and even though these cookies took 2 days to make they were really fun.
that's chopped almonds and dried cherries in there. the dough was really sticky and I had to make it into a log. my log turned out square for some reason. I could NOT get my log round. but I actually really like them as squares.
I've never done sliced cookies before and now I kindof want to try some others. I wasn't thrilled that I had to wait for the dough to chill (hence the 2 day process) but they were worth it! especially after I added this...homemade vanilla sugar glaze. yummmm. usually I omit glazes and frostings from cookies because they just seem a little excessive. but this one totally makes the cookie.
ugh just look at it dripping. I'm going to have to go have a few more. trying to save some to go with my coffee tomorrow morning... they turned out nice and crisp. perfect to dip into a nice cup of hot black coffee. toasty enough not to fall apart, a little crunch from the nuts, a little tart from the cherries, and just the right amount of sweet from the glaze.
seriously. the perfect after-dinner coffee cookie. or really anytime cookie. yep. I'll be making these again. very very soon.
